I don’t know how, but we ran out of cookies today ( ok..I do know how but am not admitting it ) and I had promised the Grands a treat. Rather than run to the store I looked through the cupboards and found my daughter had all the ingredients to make this old emergency cake on such short notice. I haven’t made it in such a long time and it was fun having the little ones help….as a bonus, clean up is minimal. Give this quick and tasty treat a try on one of those days you don’t want to turn the oven on!

You will need:

Medium heavy sauce pan
Wooden spoon or whisk
Small bowl
8″ baking dish ( I use a glass one )
Child or 2 ( optional )

2 Cups Graham cracker crumbs
3/4 to 1 Cup pecans ( substitute walnuts )
1/2 Cup butter ( substitute margarine )
1/2 Cup brown sugar
1 egg
2 Tbs cocoa powder ( I use Hershey’s but generic works fine )
1/2 tsp of vanilla, almond or cherry extract ( optional)

Half can of frosting ( chocolate, cream cheese or your favorite )

Directions:
Beat the egg in a small bowl. Combine the butter, brown sugar, and egg in medium pan and stir over very low heat until sugar and butter are melted. Stir constantly…you don’t want a scrambled egg in your mix!
Turn off heat and add Graham crumbs, pecans, cocoa and extract ( if using ). Stir well.
Pour in your baking dish and pat down firmly.
Top with your favorite frosting and cut into squares. Serve with milk, cocoa, coffee or tea and watch the smiles!
