Zucchini….you either love it and have 1000 recipe’s or hate it, period. Fortunately for us we love it and below is one of our favorite side dishes during the spring and summer. If you have little ones that say *yuck* at the word zucchini, try telling them it’s a courgette….it piques their interest and once they try it, more often than not, they like it.
Give this recipe a try…..while I use grated white cheddar, Parmesan or any other grated cheese will do fine !

Zucchini Gratin





Tomato Zucchini Gratin


You will need :
Heavy Skillet
9×9 baking dish
butter or olive oil for frying zucchini

6 medium/ large tomatoes
2 medium/large zucchini
2 Tbsp extra virgin olive oil
1 clove garlic
1 tsp oregano ( substitute dried basil )
1-2 cups grated cheese…you decide the amount ( I use white cheddar )
salt and pepper

Directions:
Preheat oven to 325*
Cut garlic clove in half and rub it around the inside of the baking dish. Grease the baking dish with a bit of olive oil.

Wash, dry, then slice zucchini in circles and fry on each side until light brown.
Slice the tomatoes. Place Zucchini and tomatoes in baking dish over-lapping each other. Sprinkle the oregano, and crush the garlic over it, then drizzle the olive oil on, add salt and pepper to taste, and sprinkle cheese on top. Bake for about 20 minutes, remove from oven, serve with any main dish and enjoy!

Tip:
I often add onions and bell peppers and a dab of butter to this for variety.
