Hard to believe BBQ season is almost over! Being a hard core BBQ fan, I manage to keep a few year ’round recipe’s on hand, though. The one below makes a great sandwich, ( or salad ) not to mention the side effects of BBQ aroma wafting through the house when you bake the chicken! Give it try anytime for a scrumptious BBQ treat!

BBQ Chicken Salad





BBQ Chicken Salad Sandwich


You will need:
1 plastic storage bag…gallon size
Baking dish
Large mixing bowl

6-8 chicken breast
1 cup mayonnaise ( I use Hellmann’s )
1/3 cup diced celery
1/3 cup diced bell pepper
1/2 cup diced onion
salt & pepper to taste.

1/2 cup bacon crumbles ( optional..we only do this if we have leftover crumbles in the fridge.)

Marinate chicken in BBQ sauce over night. I do this in a gallon size plastic, sealable bag ( One less dish to wash )
Cook the chicken any way you prefer…I bake ours at 350* for about 1 & 1/2 hours

Once cooled, chop or shred into bite size pieces. Add the mayo, onion, celery and peppers. Salt and pepper to taste…mix well with large spoon, cover and refrigerate until ready to use.

Serve on your favorite bun or bread with tomato, lettuce or coleslaw. Enjoy!
