Coconut cookies are the best! This recipe, which is my husband’s favorite, makes incredibly chewy cookies that are addictive! They are also a pretty cookie so are perfect for a special event or company.

These cookies are best served warm right out of the oven with a frosty cold glass of milk and your feet propped up.

Coconut Cookies

Ingredients:
1 ¼ cups flour
½ teaspoon soda
¼ teaspoon salt
½ cup unsalted butter
½ cup brown sugar
½ cup white sugar
1 egg
½ teaspoon vanilla
1 ⅓ cups coconut

Directions:
Preheat oven to 350 degrees. Combine flour, baking soda, and salt in a bowl and set aside.

In another bowl cream butter and sugars until smooth. Beat in egg until and vanilla until light and fluffy. Gradually blend in flour mixture, them coconut.

Drop by spoonfuls onto an ungreased cookie sheet. Bake about 10-14 minutes. Cool. This recipe makes 3 dozen.
