You can entertain for the Holidays even if you are caught up in the current financial crunch. Here is a fast and tasty Cheese Pimento Dip that can fit any budget. There is no discernible difference in taste by using generic ingredients.

Cheese Pimento Dip

My sister, Linda, serves this Cheese Pimento dip year ’round. You may substitute with low fat ingredients also. Remember, while shredded cheese is readily available, it’s more cost effective to grate your own. Spray your grater with Pam or generic equivalent for easy clean up.

Cheese Pimento Dip Recipe

You will need the following on hand:

Mayonaise, Miracle Whip, 1 large jar of pimento’s, sharp cheddar cheese and your choice of one other type of cheese. (Not Bleu or Brie or Velveeta). Think Monteray, jalepeno, etc. Keep in mind this is a *chunky* dip, and not meant to be smooth.


  • Start with 1 and 1/2 cup of cheddar (sharp, mild, etc.)
  • Add another 1 and 1/2 cup of your favorite cheese, i.e. jalapeño
  • Add the pimento’s … including the liquid
  • Start with 1/2 cup of mayo and 1/4 cup of Miracle Whip.

Stir with fork until desired consistency. Add more mayo and Miracle Whip as needed. This is a taste as you go dip, so it’s easily adjustable.

Put mixture in dip bowl and enjoy.

Serve with Wheat Thins or your choice of crackers. Also makes a great cheese sandwich for any age group.
