Pressed for time to cook dinner? The recipe below is not only fast, it’s adaptable to any picky eater…from the “I don’t like spicy” folks to the “hotter the better” crowd. These burrito’s can be as bland as cardboard or set your tongue on fire, and they only take about 15 minutes to make.


15 Minute Burrito

It’s simple if you keep a few every day ingredients on hand, like Tabasco or some other hot sauce. I keep a separate container for package mixes, such as spaghetti, taco, chili, etc., just in case I happen to be out of the spice I need the most on a particular day.

15 Minute Burrito

You will need:
Large skillet and large spoon
Medium saucepan (if you want to make a quick and simple burrito sauce)

1 # pound ground beef (may substitute ground turkey)
1/2 tsp garlic powder
1 tsp oregano
1 tsp cumin (optional)
Tabasco – a drop or 2 depending on how spicy you like your food
2 16 ounce) can re-fried beans
10-12 (10 inch) flour tortillas
4 cups shredded Mexican blend cheese, or just blend your own favorites
1 cup salsa (your choice)

Optional: Diced onions, tomatoes, shredded lettuce, diced peppers, diced olives

Place meat in skillet on medium-high heat. Add garlic powder and oregano, and cook, until meat is crumbled and not pink. This is where you can cheat if you don’t have seasonings on hand by using a package of taco mix. Drain off grease, reduce heat to medium-low and stir in the re-fried beans and salsa. Cook until heated through. Add Tabasco if desired.

Warm the flour tortillas for a minute or 2 in the microwave. (Don’t over heat !)

Spoon 1/3 cup of the beef mixture into the center, top with shredded cheese, and roll up, be sure to tuck in the ends.

Some of us like to add freshly diced onion, olives and tomato before rolling, others like to wait and add to the top after we put sauce on them. Either way, just add sour cream or guacamole and enjoy!

Fast and easy burrito sauce :
I can enchilada sauce
2 cans (15 oz size) tomato sauce

Directions: Open cans, mix together and heat. Pour over burrito’s while warm.

Optional: 1/2 tsp garlic, salt and pepper
