It’s easy to make the “best” macaroni salad. The secret is using ingredients you and your family enjoy, and omitting the one’s you just won’t eat. The recipe below is a simple, basic one that you can add almost anything to, like chicken, tuna or bacon, and not use something you dislike such as onions or celery. Best Macaroni Salad
You will need:
Large serving bowl
Large, slotted spoon
1 # box macaroni (elbow, shells, your choice)
3 hard boiled, chopped eggs (optional)
1 cup mayonnaise (I use Hellmanns)
1/2 tsp Dijon mustard
1/2 cup finely chopped celery
3/4 cup finely chopped onion (I prefer Vidalia but any will do)
1/2 cup diced green olives
1/4 cup chopped sweet pickle
1/4/cup chopped dill pickle
1 cup fresh, diced tomato
1/2 cup finely chopped bell pepper
1/2 tsp seasoned salt (I use Lowry’s)
salt and pepper to taste
Cook, drain and rinse macaroni. Set aside until cooled. In large mixing bowl, add all ingredients except mayo and mustard. Stir gently as each ingredient is added. Add mayo and mustard salt and pepper and stir until well blended. Taste and adjust seasonings if desired.
Refrigerate until serving time, place in bowl, garnish with parsley and enjoy!
