One of our favorite foods in the summer is fresh Asparagus. We like to actually grill it over the BBQ and then add this easy recipe for Lemon and Chive Dressing. It is very tasty indeed!
Grilled Asparagus with Lemon and Chive Dressing
1 lemon, fully juiced
3-4 T olive oil
1 shallot, finely chopped
small handful fresh chives, chopped
salt and freshly ground black pepper
For the lemon and chive dressing, mix the juice of the lemon in a bowl with the olive oil, chopped shallot and chives and season with salt and freshly ground black pepper. Mix dressing with asparagus. Place asparagus in a griddle pan on medium high heat on barbecue. Cook in griddle pan for 3 or 4 minutes. Dress with any remaining lemon and chive vinaigrette. Serve with a nice steak.
