These little delicious appetisers are ready in just ten minutes, start to finish. They are wonderful with a nice glass of white wine. But hey, they also make a really great healthy breakfast!
Zucchini and Cheese Baguette Bites
1 baguette of choice, sliced into thin rounds or oblongs or ovals. (You can toast these a bit if you like, but they were just fine as is.)
1/4 pound fresh white cheese, sliced to top each slice of bread.
1 medium to large sized zucchini (or 2-3 smaller ones), sliced on the diagonal (so that the slices mimic the bread)
1 roasted red pepper, peeled and sliced into strips (I just buy the jarred kind)
a spritz of olive oil
salt and cracked black pepper to taste
Slice your bread and arrange on a serving plate. Heat a skillet over medium high heat and lightly spritz with olive oil. Quickly pan grill the zucchini slices until lightly browned on both sides. Layer cheese, then zucchini slices, and garnish with a slice of pepper. Season with salt and pepper and serve. They’re just that easy.
