This recipe combines two summer favorites: a terrific Salad with Ranch dressing and BBQ! We have a lot of BBQ chicken during the summer so this is a perfect recipe to use those leftover chicken breasts.
The BBQ with the Ranch is such a refreshing and wonderful taste anyway – you’ll be hooked. By the way, you can also substitute the chicken for steak strips.
BBQ Chicken Salad
Romaine & Iceberg Lettuce
Red Bell Pepper
Can of Corn (drained)
Can of Black Beans (drained and rinsed)
Can of Fried Onions
1 part BBQ Sauce
2 parts Ranch Dressing (I use Fat Free)
Marinate chicken in BBQ sauce during the day. Combine the corn, beans, tomato, onion, and cheese. Keep fried onions and lettuce seperate until ready to serve/eat. Combine the BBQ sauce and ranch dressing. Dress the salad and top with BBQ chicken.
