This time of year, there is quite a bit of fresh spinach at the market or in our backyard gardens. At my house, Wwe eat spinach salads throughout the summer months because it’s just so good for you. The cranberries and the sunflower seeds are just an added bonus!
With this recipe, I can eat this salad as a meal all by itself. But for my family, I usually add grilled chicken, garlic bread and nice bowl of summer fresh fruit!
Cranberry Spinach Salad
1/4 cup oil
2 T white wine vinegar (I used apple balsamic)
1/4 cup shallots or garlic
1 T dijon mustard
1 T honey
1/4 cup mayonaise
Stir ingredients for the dressing together and set aside.
Large bowl of baby spinach
1 cup dried cranberries (you can also use craisins)
1 cup sunflower seeds (roasted or unroasted)
1/2 red onion, sliced thinly
Add these ingredients to your large bowl of spinach. Add the dressing and toss.
