This is a family recipe for lamb and fettuccini. Its great for a quick and easy family meal. The recipe is below.
I’ve been making this dish for over 40 years and we’re still not tired of it. It’s one of those year ’round main dishes that’s easy and quick to prepare. I originally served this with spaghetti noodles and have also used other pasta. It’s delicious regardless of the type noodles you use.
You will need:
- Large pan for boiling pasta
- Large skillet
- Large serving bowl
- Plastic or wooden spoon
- 12-16 oz. fettuccine
- 1-1/2 pounds ground lamb
- 1 Tbs olive oil
- 3 cloves garlic, chopped
- 5-6 green onions, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup tomato juice (add a bit more if needed)
- 3-4 tomatoes, diced
- 1/3 cup chopped fresh mint (about 4 Tbsp)
- 2-1/2 Tbs toasted pine nuts
Cook fettuccine according to directions; drain and set aside (covered).
Heat oil in a large skillet on medium-high heat … about 2 minutes. Add garlic and onions. Sauté for 1-2 minutes until softened. Do not let garlic brown (makes it bitter). Add lamb and cook until light brown, about 5 – 7 minutes. Use a fork to crumble the lamb.
Drain off fat and return skillet to the stove. Season lamb with salt and pepper then add tomatoes and tomato juice, Heat on medium 3-4 minutes.
Place fettuccine in large bowl and add lamb mixture. Toss well and garnish with mint and pine nuts. A beautiful, tasty and filling dish. Enjoy!
