We do love our greens in this household, and spinach is no exception. We also have a fondness for garlic, and the 2 together are delicious as well as nutritious. Here is a great recipe for spinach and garlic saute.
This dish is best when made with fresh spinach, but frozen or canned may be used (make sure it’s well drained, though) and there’s minimal clean-up involved.
You will need:
Large, heavy skillet
- Wooden spoon or tongs
- Slotted spoon
- 1-1/2 Tbsp. extra virgin olive oil
- 4 cloves garlic, sliced thin
- 1 – 1/2 pounds of fresh baby spinach (may substitute 2-10 oz packages frozen)
- 1-1/4 tsp. lemon juice
- 1/2 tsp. kosher or sea salt
- 1/4 tsp. pepper
- 4-6 green onions, sliced thin
- 1/2 cup bacon bits (or fresh, well cooked bacon crumbles)
Heat oil in a large skillet on medium or medium low. Add garlic and green onions and saute. Stir constantly for about 1-2 minutes … making sure the garlic does not brown.
Add spinach (not all at once), and stir until it’s wilted, about 2-3 minutes. Remove from heat. Add in lemon juice, salt and pepper
Add the bacon bits and toss all together.
Drain well or use a slotted spoon to remove from pan, place in serving dish and enjoy! This is a great side dish for any main meal, especially Italian or Greek.
Optional: Don’t be timid about adding mushrooms, Parmesan or Feta cheese. This is one of those side dishes that can be personalized with your own favorite flavors.
