I’m always looking for new ideas for refreshing summer drinks to use at BBQ’s and other gatherings we have at our home during the summer months. We love the lemon-blueberry taste combination and this recipe doesn’t disappoint!

Lemon Blueberry Tea



Blueberries are readily available in our area most of the summer. We buy flats and flats of them and freeze them to use all summer long. They are full of nutrients and flavor, yet very low in calories which is a great plus. Feel free though to substitute the blueberries with other berries like blackberries or raspberries – really, anything that would give you plenty of juice.

Lemon Blueberry Tea

Ingredients:
1 (16-oz.) package frozen blueberries
1/2 cup fresh lemon juice
1 fresh lemon
4 cups water 3 family-size tea bags
3/4 cup sugar

Directions:
Bring 1 (16-oz.) package frozen blueberries and 1/2 cup fresh lemon juice to a boil in a large saucepan over medium heat. Cook, stirring occasionally, 5 minutes. Remove from heat, and pour through a fine wire-mesh strainer into a bowl, using back of a spoon to squeeze out juice. Discard solids. Wipe saucepan clean.

Bring 4 cups water to a boil in same saucepan; add 3 family-size tea bags, and let stand 5 minutes. Remove and discard tea bags. Stir in 3/4 cup sugar and blueberry juice mixture. Pour into a pitcher; cover and chill 1 hour. Add fresh slices of a lemon as a garnish in the pitcher; serve over lots of ice.
