It’s grilling time again, which usually means the standard hot dogs, hamburger and chicken fare. However, if you’re looking for something different, try these delicious lamb kabobs…the hardest part is waiting on them to marinate!
You will need:
1 1/2 -2#’s lamb, cut in 1-inch pieces
1 large zucchini, sliced 1/4 ” thick
1 medium to large red onion, peeled and cut in chunks
1 large garlic clove, minced
1 tsp ground cinnamon
/4 tsp ground cumin
3/4 tsp ground coriander
2 1/2 Tbsp olive oil
2-3 Tbsp red wine
1/2 tsp salt
Place all in large bowl and add lamb chunks. Stir until evenly coated. Cover and refridgerate at least 6 -7 hours. I usually marinate overnite.
Get your grill ready! Slice zucchini and put in separate bowl along with onion chunks. Drizzle some of the marinade over the veggies, just enough to lightly coat.
Thread lamb, zucchini and onion on skewers. Equally divide ingredients on skewers. Each skewer should have at least 5 pieces of lamb, but veggies are adjustable.
Grill until done to everyone’s preference, turning occasionally. Keep in mind that medium rare usually takes only 7-8 minutes.
Remove, serve and enjoy!
Tip: These are easily made using a broiler, too, and beef can be substituted for lamb.
