Scalloped pineapple is one of those side dishes that has been around a long time, but you seldom hear it mentioned anymore in this fast paced world. Here is a recipe you can try that doesn’t take that much time and is great.

Scalloped Pineapple

This recipe takes less than an hour to make from start to finish and is kid friendly, too. It’s delicious, clean-up is minimal and it’s fantastic warm or cold. Give it try!

Scalloped Pineapple Recipe

You will need:

  • Small bowl
  • Cooking spray (we use Pam)
  • Medium baking/casserole dish
  • Wooden spoon or hand mixer


  • 1 Cup sugar
  • 1/2 Cup butter (softened)
  • 4 eggs, beaten
  • 5 slices of white bread, cubed
  • 1 can crushed pineapple, drained
  • 1/2 tsp lemon extract (optional)


Preheat oven to 350 degrees.

Spray baking dish with Pam.

Cream butter and sugar together; add eggs, mix well by hand or low setting on mixer. Fold in pineapple and bread cubes and stir a few times. Pour into baking dish and bake until golden brown … usually 30-40 minutes, depending on your oven.

Remove and let sit 5 or 10 minutes before serving.

This side dish goes very well with ham or pork chops but can be served with any main meal. Enjoy!
