Spicy Texas Caviar

This is my favorite dip for tortilla chips. It’s easy, healthy and really yummy. I love the sweet corn, cilantro and avocado well, and the tomatoes and lime! You can ‘heat it up’ using Tabasco or jalapenos. This is a perfect party or backyard BBQ food. Make a lot of it because it will go fast.

Spicy Texas Caviar

Ingredients:
3 cans black eye peas, drained and rinsed
2 cans shoepeg corn, drained
3-4 Roma tomatoes, chopped
3 avocados, chunked
1 bunch of cilantro, chopped
1/2 sweet onion, minced
juice of 2 limes
Good Seasonings Italian Dressing packet, prepared
salt to taste
Optional: Tabasco sauce, jalapenos

Combine all ingredients in large bowl, adding avocado last. (If you use Tabasco, this is where you add it!) Pour about 1/2 the dressing into mixture and stir gently. Add as much dressing as desired. I usually use a little more than half. Serve with blue tortilla chips. Enjoy!
