Tzatziki is that wonderful cucumber dressing /dip that so many enjoy on the gyro sandwich. It’s delicious served with almost any raw or blanched vegetable, pita bread and crackers, too. The recipe below is but one of many variations of this unusual taste sensation….it’s easy to make and absolutely delicious!

Cucumber & Yogurt Dip (Tzatziki)


Cucumber & Yogurt Dip (Tzatziki)

You will need:
Large mixing bowl
Whisk

Ingredients:
1 1/4 cup finely diced, seeded cucumber
Cream cheese 8oz, softened
2 Cups plain yogurt (drained)*
2 finely minced garlic cloves
2 Tbs.chopped fresh dill (may substitute fresh mint)
1 Tbs lemon juice
2 tsp lemon zest
1 tsp black pepper

Directions:

*While not necessary, I drain the yogurt the night before making. Simply pour it into a bowl lined with 2-3 coffee filters. Cover and place in fridge. This makes for a far less runny and more spreadable dip.

Whisk yogurt and cream cheese in bowl until smooth. Add the remaining ingredients. Whisk until well blended, then refridgerate for at least 2 hours. The longer it sets, the better it tastes! Garnish with fresh mint or parsley sprigs.
