Ok. So we all know bacon isn’t that *healthy*, but we also know that almost everything but ice cream tastes better when bacon is added! Below is a recipe that utilizes the flavor of bacon grease and it’s a fabulous dish. Sometimes, it’s good to break the rules!
We really enjoy this over hot buttered biscuits but it’s delicious when mixed with linguini or spaghetti noodles also.
Creamed Peas with Bacon
You will need:
large, heavy skillet
large mixing bowl
8-10 slices bacon
2 cans of peas (15oz size, well drained)
4 1/2 tablespoons flour
1 can evaporated milk (12 oz), we use generic
salt and pepper to taste
Fry bacon in skillet until crisp enough to crumble. Remove from pan and crumble. Save the grease in the pan. Reduce heat to low, and stir in peas..heat for apx 2 minutes. Cook on low heat until peas are warm.
In large bowl, stir in flour, salt and pepper, add milk (a little at a time) and whisk until blended well. Add mixture slowly to the peas in the skillet, cook over medium until sauce thickens. Stir in bacon, remove from heat, pour in serving dish and enjoy!
