Ever have trouble getting the kids (or some adults) to eat cooked carrots? Below is a recipe that is sure to change their minds. I’ve found the little ones really like them this way and normally double the recipe. Give it try!
Honey Glazed Carrots
You will need:
Wooden or plastic spoon
1/2 cup butter
1/2/cup light brown sugar
3 1/2 Tbsp honey
1 bag of baby carrots (the 16 oz size)
1 1/2 tsp salt
Rinse carrots and place in large pot, add salt and cover with water. Bring to a boil on high heat, reduce heat to medium high and continue boiling for apx. 15 minutes. When tender, drain and allow to set for 1 or 2 minutes in a bowl. Turn heat on medium low and add butter to pot. When it’s melted, stir in the honey and brown sugar …then add your carrots, stirring gently. Cook on low for about 5 minutes. Make sure carrots are well coated.
Pour into serving dish and enjoy with any meal!
