This is extremely easy to put together – the hardest part is the preparation, cutting and cleaning everything. This salad makes an excellent side with chicken, beef or pork or a great filling lunch all by itself. You really can just add any vegetables you like, I always just use what I have on hand.

Brown Rice Salad

Ingredients:
1 1/2 cups instant brown rice
1 chopped green onion
1/2 cup chopped carrots
1/2 cup chopped cucumber
1/4 cup chopped parsley
1/4 cup rice vinegar
1 Tbsp olive oil
1 tsp sugar
1 tsp salt
1/2 tsp pepper

Optional: Add chickpeas or pea pods, tomatoes, or green onions, kale or fresh spinach!

Cook brown rice & let cool. Combine ingredients for vinaigrette & combine with rice & vegetables. Serve at room temperature.
