This is a quick and easy meal with about a 30 minutes prep and cooking time. And hey, it’s also a great way to eat your veggies and your kids will love it too!

I think it’s the olive oil and garlic that give this such great flavor! We usually make this when we are grilling steaks or chicken. But alone, it would make a filling, and very healthy lunch.

Veggie Stir Fry

1 cup chopped carrots
1 cup fresh broccoli florets
1 cup fresh green beans
1 medium onion; chopped
1 clove garlic; minced
1 Tbsp olive oil
salt & pepper

Optional: I am a big pea pod lover (raw or in stir fry) so i usually throw those or some bean sprouts in at the last minute as well. Also, try adding in some sesame seeds or raw spanish peanuts.


Heat oil in large skillet. Add carrots, onion and broccoli and season with salt & pepper.

Cook, stirring frequently, over med high heat (cover occasionally if you need to speed this up). Just before vegetables are fork tender add the green beans and garlic.

Cover & let steam until crisp tender.
