Below is a recipe for a delightful and easy to make fritter … a delicious alternative to pancakes, donuts or other pastry treats. Fritters are great with that first cup of coffee in the morning, or as a special after school treat for the kids. Actually, fritters are fantastic anytime if you enjoy fried foods (as I do).
You will need:
- Large bowl
- Deep non-stick frying pan or deep fryer
- Mixer (optional)
- 1 egg
- 1 can well drained pineapple rings
- 1 cup milk
- 3 Tbsp sugar
- 2 1/2 tsp baking powder
- 2 Tbsp butter
- 2 1/2 cups all purpose flour
- cooking oil (at least 1 1/2 cup if using skillet, more of using deep fryer)
Place all ingredients but pineapple in bowl. Beat ingredients into a stiff batter (low setting if using mixer).
Add pineapple rings …. coat well.
Drop into deep hot oil and fry until golden brown. Turn over as needed.
Remove, drain on paper towels and sprinkle with brown sugar if desired.
Serve warm (although they are delicious at room temperature too).
Enjoy for breakfast or an afternoon snack, any time of the year.
Tip: You may substitute well drained crushed pineapple for the rings … simple add to batter last and stir, drop by Tbsp in oil.
