These applesauce muffins are really delicious and the kids like to help make them. Here is an old fashioned recipe that might not win any health food awards, but they sure are good.

Applesauce Muffins


This applesauce muffin recipe is not difficult to make. Its also something that the kids will enjoy helping you make. They can test to see if the muffins are done by sticking a fork in them. If the fork comes up clean then they are done. They also enjoy dipping the muffins in the butter and sugar. Most of all, they enjoy gobbling them up.

Applesauce Muffins Recipe

Ingredients:

  • 2 cups Bisquick mix
  • 1/4 cup sugar
  • 1 tsp. cinnamon
  • 1/4 cup reconstituted non-fat dry milk
  • 1/2 cup applesauce
  • 1 slightly beaten egg

Topping:

  • 2 tablespoons butter
  • 1/4 cup sugar
  • 1/4 tsp. cinnamon

Directions:

Preheat oven to 400 degrees.

Mix together dry ingredients (Bisquick mix, sugar and cinnamon). Mix together wet ingredients separately (non-fat dry milk, applesauce, egg).

Add wet mixture to dry mixture and beat vigorously for 30 seconds. Fill greased muffin pans 2/3 full.

Bake at 400 degrees for 15-20 minutes (until you can stick a fork in the center of the muffins and it comes out clean). Cool and remove from pan. Set aside.

Melt 2 tablespoons butter. Combine 1/4 cup sugar and 1/4 tsp. cinnamon. Dip each muffin in butter, then in sugar mixture.

Makes 10 – 12 muffins.
