I love okra … boiled, fried, stewed, mixed with other veggies, it just doesn’t matter to me. Fried okra ranks high on my list of comfort foods, much to the chagrin of my vegetarian/health conscious daughter. She recently tried *oven fried* okra and convinced me to give it a taste test. I did, and it was wonderful. So skip the bacon grease/oil, follow this simple recipe and enjoy healthy oven fried okra for a delightful change.

You will need :
- Large bowl
- Medium bowl
- Cookie sheet (greased or sprayed with cooking spray)
- 1 cup bread crumbs (we used seasoned)
- Salt and peeper to taste
- 2 eggs
- Tabasco sauce to taste (just a dash for us)
- 1 lb fresh okra (washed and drained dry)
Preheat oven to 475 degrees.
Place the bread crumbs in a large bowl and add salt and pepper to taste.
In another bowl, beat the eggs, stir in the Tabasco and a dash of season salt. Dip a few okra pods at a time in the egg …. then toss lightly in the crumbs until coated. Place okra on a greased cookie sheet and bake 10 minutes or until brown and crispy.
Eat warm as a snack or serve as a side dish. Try your favorite dipping sauce! Enjoy!
