Anyone that loves chocolate will really appreciate this decadent recipe. With pre-made refrigerated pie crusts so available, this is virtually goof-proof!
The directions below are for 2 pies because they go fast!
East Kentucky Derby Pie
You will need:
2- 9″ pie pans
2 refrigerated ready made pie crusts (I use Pillsbury) Follow the simple instructions on the box
1 cup sugar plus 1 tablespoon
1 cup light corn syrup
4 eggs at room temperature
1 1/2 teaspoon vanilla extract
1/4 cup flour
1 stick butter, melted
1 1/2 cup pecans (soak in about 1-1/2 to 2 Tbsp of bourbon)
1 3/4 cup semi-sweet chocolate morsels
pinch of salt
Mix sugar, syrup, and add eggs one at a time; then vanilla and pinch of salt. Stir well.
Blend in flour a little at a time. Add melted (but cooled) butter, drained pecans and chocolate chips. Pour into unbaked pie shells and bake in a 350-degree oven for 45-55 minutes until center is set.
Remove from oven, cool. Serve as is or with vanilla or butter pecan ice cream. Whipped topping is also excellent!
