I use my crockpot a lot and anytime I can use it for Mexican food, I am really happy. This recipe is tasty, fun and as easy as can be. It’s pretty much a ‘go-to’ meal for my family when we have a fairly hectic schedule because everyone loves it.

I usually serve this with either pinto or black beans and side salad or fresh fruit bowls. If you have younger children, make sure your peppers aren’t too hot!

Crockpot Fajitas

Ingredients:
1 1/2 lbs of beef steak or chicken
1 cup chopped onion
1 green sweet pepper, cut into 1/2 inch pieces
1 or 2 jalapeno peppers, chopped
1 Tablespoon snipped cilantro
2 cloves of garlic, minced
1 teaspoon of chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1 (8oz) can stewed tomatoes or rotel

12 (7 inch) flour tortillas

Toppings:
Guacamole
Sour Cream
Salsa
Shredded Cheese

Place all ingredients in crock pot and cook on low 8-10 hours. Stir occasionally. Place meat mixture on tortillas with your choice of toppings. Roll up and enjoy!
