Do you need a hot meal that’s fairly fast, hearty and inexpensive? Try this really yummy recipe. Your whole family will really love it and the kids will enjoy helping make this too.
Serve this dish with a really nice salad and hot fluffy rolls. This is a great ‘comfort’ dish so take it to someone who’s been ill, had a baby, or just needs a little extra help. Oh, and it freezes really well!
Poppy Seed Chicken Casserole
6 cooked and shredded chicken breasts
1.5 sticks of butter
2 cans cream of mushroom soup
2 T poppy seeds (I sometimes use more)
1.5 stacks Ritz crackers, crushed
8 oz sour cream
2 C cooked rice
salt and pepper to taste.
Melt butter and add to crushed Ritz crackers. Mix rice, chicken, soup, poppy seeds, salt, pepper and sour cream. Pour into a deep baking dish. Spread cracker mix on top and bake at 350 for 35-45 minute or until nice and bubbly.
