We love peanut brittle around here and have tried many recipes for this delicious treat. This is my favorite, without the every day peanut.
This recipe for mixed nut brittle is a great brittle without the peanuts. Sometimes I buy bags of pecan, walnut and cashew pieces and use those instead of the mixed nuts in a can without the *peanuts*.
Give it a try! Just remember, stirring vigorously is the key for perfect brittle!
You will need:
- Candy thermometer
- metal spatula
- baking sheet
- large saucepan
- 1-1/2 teaspoons plus 3 tablespoons butter, divided
- 1-1/2 cups sugar
- 1 cup water
- 1 cup light corn syrup
- 1 can (10 ounces) mixed nuts WITHOUT peanuts
- 1 teaspoon vanilla extract
- 1-1/2 teaspoons baking soda
Butter a baking sheet with 1-1/2 teaspoons of butter; set aside.
Combine the sugar, water and corn syrup in the saucepan and cook over medium heat until the candy thermometer reads 270 degrees. Stir occasionally. Add nuts, cook and stir until the mixture reaches 300°. Remove from heat and stir in vanilla and remaining 3 Tbsps of butter. Add baking soda and stir VIGOROUSLY! Immediately pour onto prepared baking sheet. Spread with a buttered metal spatula to 1/4-in. thickness. Cool before breaking into pieces.
Place in candy dish and enjoy!
