This is an old recipe that some say started with the Mormons but my grandmother swears it started with us Baptists! It’s easy, tasty, and great for large gatherings like church potlucks, family buffets, and er, funerals.

So don’t let the name put you off! This is actually one of our favorite side dishes. In fact, when I was pregnant with my twins, I craved these all the time! Serve with sweet ham, fluffy white rolls, green jello, and a big bowl of salad with ranch dressing.

Funeral Potatoes

Ingredients:
1 2lb package hash brown
1/4 cup melted butter
1/4 teaspoon salt
1/2 cup chopped onion
2 cups of sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
2 1/2 cups of cheddar cheese
2 cups crushed corn flakes

Mix all together, pour into a greased 9×13 casserole dish. Add extra cheddar cheese to top and crushed corn flakes. Bake at 350 for 1 hour.
