Tomato, Onion & Cucumber Salad

Don’t be afraid to mix it up, add in your favorites. We personally like to dice up yellow squash and zucchini and toss it in when available. It’s all about what YOU and YOUR family like :-)

Tomato, Onion & Cucumber Salad Recipe

You will need:

  • Medium bowl to mix
  • Salad bowl to serve


  • 1 large cucumber
  • 1 medium onion (Red or Vidalia)
  • 1 large tomato
  • Italian dressing (zesty … about a cup)
  • 1 Tbsp wine vinegar
  • salt and pepper to taste
  • Feta cheese (optional)


Cut up cucumbers, onion, and tomato in small cubes. Salt and pepper as desired. Add 1 tbsp wine vinegar.

Add enough Italian dressing to cover and refrigerate for about 2 hours. This is delicious with any main dish but in season we have it for lunch, along with garlic toast or pita bread and a cold drink.

Absolutely refreshing!
