Sometimes you get ready to cook or bake, and you find that you’re missing the right ingredients. It might mean you must make a quick trip to the market. Other times, however, you can substitute something you have on hand for the missing ingredient. Here is a list of common substitutions:


1 cup whole milk

1/2 cup evaporated milk and 1/2 cup water
or
4 tablesoons powdered milk and 1 cup water
or
4 tablespoons nonfat dry milk plus 2 teaspoons shortening and 1 cup water





1 cup buttermilk

1 cup regular milk and 1 tablespoon lemon juice or vinegar





1 cup sour cream or heavy cream (for baking)

1/3 cup buuter and 2/3 cup milk





1 one-ounce square unsweetened chocolate

3 tablespoons cocoa plus 1/2 teaspoon shortening





1 tablespoon cornstarch (for thickening)

2 Tablespoons flour





1 tablespoon flour (for thickening)

1/2 to 2/3 tablespoon cornstarch
1 tablespoon tapioca
or
1 whole egg





1 cup granulated sugar

1 1/3 cup brown sugar
or
1 1/2 cup powdered sugar





1 teaspoon baking powder

1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar





1 cup butter or margarine

7/8 cup vegetable or nut oil





1 cup honey

3/4 cup sugar plus 1/4 cup liquid
or
1 cup molasses
