Love Mexican food, but a bit tired of taco’s and nacho’s? Try Judi’s delicious Mexican Manicotti recipe. Easy to make, a little goes a long way and there’s very little clean up involved!

Mexican Manicotti Recipe

You will need:

  • Large bowl
  • 9 x 13 baking dish (lightly oiled or sprayed with cooking spray)

Ingredients:

  • Box of Manicotti shells
  • 1 lb ground beef
  • 1 tsp. oregano
  • 1 tsp. chili powder
  • 1 can refried beans
  • 1 pkg. taco seasoning mix
  • 1 Cup salsa (your choice)
  • 1 Cup chopped onion
  • 2 Cups Mozzarella or Monterey Jack cheese, shredded
  • Sour cream (optional)
  • Olives … your choice (optional)

Directions:

Mix the ground beef. oregano chili powder, beans and taco mix together in a bowl.

Stuff mixture into uncooked manicotti shells and place stuffed manicotti in baking dish.

Top with 1 cup of water and 1 cup of salsa, cover and bake at 350 degrees for 1 hour.

Remove from oven and top with enough sour cream to cover, diced onions and shredded cheese. Continue baking until cheese turns brown …. watch closely, it’s usually about 12-15 minutes.

Serve warm with a side salad and your choice of bread. We prefer cornbread to garlic toast with this, but again, it’s personal choice.
