Need a delicious breakfast casserole? Or having brunch? This potato bacon casserole is an old family favorite and is easily adjustable to your own personal taste.
We enjoy the green olives in ours, other people like green peppers and yet others want no part of it but the bacon, cheese and potatoes!
This doesn’t require a bread crumb topping but we sometimes add them, or crushed chips for a different look and taste.

Turkey Leftovers Recipe’s: Turkey Pot Pie

Still looking for leftover turkey recipe’s? This turkey pot pie is a simple adaptation of your standard chicken pot pie, but with a more flavorful crust. It only takes minutes to prepare and is ready in less than hour. Great to serve the game during half-time!

You will need:

13 x 9 baking dish
Medium bowl
Wooden spoon

2 cans cream of chicken soup ( substitute cream of mushroom )
3-4 cups frozen mixed vegetables thawed ( thaw in microwave 4-6 minutes )
2-3 cups leftover turkey,diced

1 cup cup milk
2 eggs
2 cups Bisquick
1/2 tsp garlic powder ( optional )
salt and pepper to taste


Preheat oven to 400*

Mix soup, vegetables and turkey in baking dish. Add salt and pepper to taste.

In medium bowl, mix milk, egg, garlic powder, a dash of salt and pepper, and baking mix together until blended. Pour over turkey mixture and bake for 30-40 minutes . It’s done when top is golden brown.
Remove from oven and serve with a tossed salad, cranberry sauce or coleslaw. Enjoy!

Chicken Noodle Casserole

Casseroles! Most people either love them or absolutely hate them! Some folks, young and old alike, just don’t like their food *touching* other food. I personally think the disdain for casseroles is the over-use of tuna noodle casserole many years ago…. so many of us are guilty of that. Fortunately, I enjoy most of them as do the kids and grandkids and one of our favorites is the chicken noodle recipe below. It’s a delicious way to use up left-over chicken and takes very little time. Try it out, and don’t be afraid to add your own personal touch!

Overnight Cornflake Pie

I really enjoying cooking *make-ahead* meals; main reason being that the work is done, the clean-up is all but finished and we all know that so many foods taste better the next day! This can be made any night of the week, but we usually enjoy it on weekends when we have more time to spend at the breakfast table. While cornflakes and pie don’t necessarily belong in the same sentence, give this delicious recipe a try sometime!

Chicken Cordon Bleu Casserole

Yes I know…. Chicken Cordon Bleu ( Blue Ribbon Chicken ) and the word casserole should never appear in the same sentence…BUT…this is the only way I know of to give the taste of Chicken Cordon Blue to the whole family without spending hours in the kitchen. So many of us not only budget our money, but our time as well and this easy to prepare, filling and delicious dish should please everyone in the family.
The cheeses and spices may be adjusted to your taste along with the amounts. Give this a try when you’re looking for something different to do with chicken, and don’t have the time and patience to make individual Chicken Cordon Bleu.

Zucchini Tomato Gratin

Zucchini….you either love it and have 1000 recipe’s or hate it, period. Fortunately for us we love it and below is one of our favorite side dishes during the spring and summer. If you have little ones that say *yuck* at the word zucchini, try telling them it’s a courgette….it piques their interest and once they try it, more often than not, they like it.
Give this recipe a try…..while I use grated white cheddar, Parmesan or any other grated cheese will do fine !
