Eggplant & Zucchini Pasta

For those days when you’re pressed for time but still want a nourishing and delicious meal, try this veggie pasta recipe below. The blend of zucchini, eggplant and onions in garlic sauce gives the penne pasta a unique and delightful flavor.
While I try to make all my sauces from scratch, I do keep a variety of pre-made on hand…spaghetti, garlic, Alfredo and cheese can always be found in the pantry for harried days like this one. If you watch your weekly sales, they normally are half price at least once a month….stock up !

Alfredo Cream Cheese Sauce

Alfredo sauce has long been a favorite around here, whether used on chicken, pork, pasta or vegetables. The jarred variety has become a must have item in our pantry over the past few years, however, after awhile it can become boring and trying to *doctor* it seldom works. We decided to go back to the old fashioned, made from scratch sauce we were raised with. Give it a try…it’s delicious and definitely worth the little effort it takes to make it! The cream cheese aids in thickening the sauce and gives it an extra bit of flavor.

Best Macaroni Salad

It’s easy to make the “best” macaroni salad. The secret is using ingredients you and your family enjoy, and omitting the one’s you just won’t eat. The recipe below is a simple, basic one that you can add almost anything to, like chicken, tuna or bacon, and not use something you dislike such as onions or celery. Give it a try, experiment and make your very own “best macaroni salad”!

One of the terrific things about this dish is that you can make it earlier in the day and pop it in the oven when you are getting ready for dinner. Serve it with a nice garlic bread and salad.

I’ve been making this dish for over 40 years and we’re still not tired of it. It’s one of those year ’round main dishes that’s easy and quick to prepare. I originally served this with spaghetti noodles and have also used other pasta. It’s delicious regardless of the type noodles you use.

This recipe is perfect for the night when you need to just whip something together really fast. Garden fresh or summer tomatoes are a must with this recipe — store bought just doesn’t quite taste the same. Serve this with fresh fruit and garlic bread.

Angel Hair Pasta Salad

This pasta salad gets rave reviews everytime I make it — it’s just that good. The great thing about this recipe is that it is so simple but the flavors are incredible and the addition of toasted pine nuts adds that delicious crunch!

Personally, I could eat the noodles plain without all the veggies because they are fantastic by themselves with just the garlic olive oil and parmesan cheese so consider that if you need just a quick meal for yourself. But when you add everything together, you have a terrific dish that you’ll eat frequently, especially throughout the summer.
