Mild Taco Seasoning Mix

Taco’s….sometimes I think my family believes them to be the *perfect food * and we used to use a lot of those pre-packaged mixes. One day I remembered that pre-made mixes weren’t always around and decided to search for my recipe from the 70’s. The only change I made was in the salt…kosher or sea salt seems to have so much more flavor! Give this a try, if you like it, just increase the amounts to double or triple the recipe and keep it on hand.

Pico de Gallo

Pico de Gallo is a Mexican dip that is primarily made of fresh tomatoes, onions, and chili peppers. At our house, we always have a jar of freshly made Pico de Gallo in our fridge. We eat it on everything: from our eggs at breakfast to cheesy quesidillas to use with our BBQ burgers or steaks. We love it. The good news is that it’s quick and easy to make and stays well in the fridge!

15 Minute Burrito

Pressed for time to cook dinner? The recipe below is not only fast, it’s adaptable to any picky eater…from the “I don’t like spicy” folks to the “hotter the better” crowd. These burrito’s can be as bland as cardboard or set your tongue on fire, and they only take about 15 minutes to make.

It’s simple if you keep a few every day ingredients on hand, like Tabasco or some other hot sauce. I keep a separate container for package mixes, such as spaghetti, taco, chili, etc., just in case I happen to be out of the spice I need the most on a particular day.

Fajita Marinade

Well sure you could buy a package of marinade spices at the grocery store or you could step out and make your own! I use this for both chicken and beef and let me tell you, it is pretty great if I say so myself!

Crockpot Fajitas

I use my crockpot a lot and anytime I can use it for Mexican food, I am really happy. This recipe is tasty, fun and as easy as can be. It’s pretty much a ‘go-to’ meal for my family when we have a fairly hectic schedule because everyone loves it.
