I grew up in the Pop-Eye era back when children believed everything they were told, and loving Pop-Eye enabled me to eat spinach at an early age and enjoy it. It’s not so easy anymore to convince children that green food is good for you, hence all the spinach recipes over the years. My Aunt used to make baked spinach with Swiss cheese as a treat…my how we were were easily fooled! One of our family favorite’s is below; give it a try sometime, especially if you have one or two of those picky eaters!
