Simple Rice Pudding

Rice pudding to many folks is considered comfort food, not just dessert. It’s supposed to cure what ails ya, so to speak. While I admit I prefer regular rice, after changing ingredients around a bit, I decided that this rice pudding made with minute rice was great in a comfort food emergency. Give it a try sometime. Adjust raisins and sugar as desired.

Cilantro is one of the flavors I always associate with Mexican food. This particular rice can be used in burritos with chicken or beef, but it also makes a yummy side dish with our Honey Lime Enchiladas.

Bourbon Chicken

This is a favorite recipe of my family. It’s named after Bourbon Street in New Orleans, Louisiana and this particular recipe doesn’t have any alcohol in it.

The sauce has great flavor – just the right amount of sweetness and spice. For the chicken – it’s your choice whether you want a little breading on it or not. I just lightly dusted the chicken bits with cornstarch to give them a slight crispiness. This is a two-step recipe and takes very little time to prepare.
